When using DDS Secure are also the topics encrypted so no one but the publisher and the subscriber know about them, or can you listen to the traffic and find out which topics are used?

When using DDS Security Builtin Plugins, you can configure whether the discovery information on specific Topics should be sent using protected discovery writers or using the regular unprotected discovery writers. You can do that by setting enable_discovery_protection in topic_rules section of the domain governance XML file.
In addition to discovery data, you can specify how you want to protect exchanged data and metadata under topic rules in the governance document.
